Ingredients

  • 1 ¾ lb. sweet potatoes cut into medium chunks
  • 3 tbsp capers drained
  • 4 celery ribs thinly sliced
  • 3 green onions thinly sliced
  • ½ red bell pepper small diced
  • ½ yellow bell pepper small dice
  • ½ orange bell pepper small dice
  • ¼ c fresh cilantro chopped
  • ¼ c extra virgin olive oil
  • 2 tbsp balsamic vinegar
  • 1 tbsp dijon mustard
  • 1 tsp crushed garlic
  • ground pepper fresh

Instructions

  • Add potatoes chunks to a steamer in a medium saucepan. Steam until potatoes are soft. Use a fork to test. Set aside to cool.
  • Add capers, celery, onion, bell peppers and cilantro to a large bowl. Add cooled potato chunks to the salad. Stir gently to combine.
  • In a separate bowl, whisk oil, vinegar, mustard and garlic until well mixed and slightly thick (the mustard will emulsify the dressing).
  • Pour dressing over the potato salad and mix gently. Grind some fresh pepper over top, mix again.
  • Enjoy!
